Every month, my Martha Stewart Cupcake Challenge Group selects a bonus challenge. This month's challenge was the Applesauce Spice Cupcakes. It worked out perfectly because I made these cupcakes while visiting my brother, sister-in-law, and two nephews a couple of weeks ago. Except this time while baking, I had a little helper!
Meet Ryan, my wonderful nephew.
He was the best helper an Aunt could ask for!
Here is the end result. I thought they were incredibly easy to make, and so tasty, too. I think these would be just fine without the frosting. I made the brown sugar frosting, but forgot that I had halved the recipe, so it had too much brown sugar in it! Despite my error, they still tasted great. I would definitely make these again, but probably as muffins! Forgive the lack of pretty decorating! I was out of town and away from my normal arsenal of equipment. :)

Lucky you! It is great to have a helper! When my 3 year old granddaughter comes to visit baking something is the first thing she wants to do.

I agree with you on the muffin-like texture of the cupcakes. I want it to be more cake-like, like a true cupcake. Oh well.
