MSC: Oops, I made the wrong cupcakes!

Oops, I accidentally made the gingerbread cupcakes instead of the sweet potato! I went out of town on Tuesday, and didn't get back until this afternoon. So I had made the gingerbread last Monday, in anticipation of not wanting to bake after a day of travelling. I thought these turned out amazing and will definitely make them again. They would be perfect without the frosting, too. Sorry for the un-detailed post!

I'm desperately trying to decide whether to bake these up for my (belated) thanksgiving celebration this saturday in place of my usual (favourite) maple layer cake - and I'm just worried that they'll come out a teensy bit dry... (I sometimes feel like recipes with buttermilk or sour cream or vegetable oil come out more moist for me than butter cakes).. So just wondering if you found this to be the case at all..?? I'd really appreciate any thoughts!!! x

I didn't think these were dry at all. I did think they were a little muffin-like, but they tasted great with the frosting, too.

I know what you mean by buttermilk, etc. making things seem dry. Red Velvet was my nemesis for a long time, and I thought it was because of the buttermilk in the recipe.

I think you should give these a try...they have a great flavor and they went over very well when I presented them to my co-workers....good luck!
